Some of the more general ones could be broken down I suppose, but do your best. :)

IM : BeeJiveIM - Expensive, but worth it, i think ive tried all the free ones and they were rubbish.
Twitter : No
FaceBook : Facebook app
Flickr : Flickr app
Camera : Standard iPhone one
GPS Navigation : Google maps - might look at the non TomTom ones at some point, but I all ready have a proper GPS (Mio)
Data Usage : iiQuota Lite - Yes, two letter 'i's
Fitness/Healthcare : Nike + iPod - I even have compatible shoes, the Nike Looner trainers. I also have RunKeeper.. i swim more than i run though.

App management : Im not sure whatcha mean??? Hold home button, apps wobble, move them around/delete them? Ill edit my post when I figure it out :D

Business : iCal - syncs with iCal on my lappy, and had reminders for appointments, and backup reminders etc, brilliant little organiser.
Music : iPod
Travel : None
Weather : Pocket Weather Lite
Public Transport : Metlink - Melbourne only as far as i know, but was just so brilliant when i was in and out of the city everyday on trains. Has train timetables, tram, and bus. Can plan trips, its constantly updated for new time tables etc. includes Vline as well. I must admit i dont use it much now, because i dont often use public transport, but when i did, it was fantastic.

IM : I don't really use IM much, but if I do, eBuddy
FaceBook : Facebook ap
Flickr : I actually prefer using the website m.flickr.com than the app. I set the shortcut to an icon.
Camera : Dont use the camera much, so just the default one
Data Usage : I was using iquota, but it seems unable to check virginmobile anymore, unless they updated it.
Fitness/Healthcare : iMapmyrun - uses gps to see how far/fast you run/cycle etc, and it gives you voice feedback as you go. Its pretty cool. I have a few other free ones that I'm yet to try out though - cos I barely ever excecise lol
Music : I just use the inbuilt ipod software, though coming from using a rio karma, the on the fly playlist stuff is shithouse.
Weather : Pocket Weather AU. Love this program!
Public Transport : I don't think there is one for Adelaide :(

Yep the paid one.. I am not sure what it can do that the free one cant, as I don't believe there was free one when I bought it. Its worth the $2.50 anyway :yes:

IM : don't use. I didn't actually know there was one for the iPhone. Should have known though. You can get everything for the iPhone :)

Flickr : flickr app
Camera : Gorillacam Seems to work better than the standard camera app and its free.
GPS Navigation : Google app
Data Usage : iiquote Paid... they didn't have the light version when I got it... damn it.
Fitness/Healthcare :
App management : iTunes ?
Business : Commbank, Yellow Pages, White Pages, Ebay, Dominos Pizza, Bloomberg (but the standard one works just as well really)
Music : iPod
Travel : Around me,
