20ml Vegetable Oil
1tsp Black Mustard Seeds
1 large onion coarsely chopped
5 tbsp Tikka Masala curry paste
600g lean Pork Strips
165ml Coconut Milk
250ml Chicken Stock
4 Zucchini, cut into halfs, then quarters lengthways.
A hand full of roughly chopped Coriander leaves
Steamed Rice.
1 Heat the oil in a pan. Add the mustard seeds and cook over a medium heat for 30 seconds, or until they start to pop. Add the onion and cook, stirring for 3-4 mins until softened.
2 Stir in the Tikka Masala curry paste and heat it up in the frying pan for 1 min, then add the pork and stir the meat to coat it completely in the paste mixture.
3 Add the cocount milk and stock, the bring to a simmer and cook over a low heat for about 5 mins.
4 Add the Zucchini and cook for another 5 mins, or until they are tender and the pork is cooked though.
5 Place curry on a bed of steamed rice and scatter with the Coriander Leaves.
