Thyme and Coriander Lamb Cutlets

1) Brush the cutlets with olive oil and season with salt and pepper.

2) BBQ for 4 minutes each side, only turn once!

3) Chop Thyme and Coriander and mix with olive oil.

4) Once cutlets are cooked season with salt again and brush with the dressing. Let them rest for 3 mins.

5) Serve with mashed potato and blanched asparagus. You can also serve with a red wine sauce if you like.
