JD's Original Seafood Risotto

JD's Original Seafood Risotto

Serves 4

1 Large Onion, finely chopped
30g Butter
4 Cloves Garlic, minced
20ml Olive Oil
250g Arborio Rice
2 small tubs of Tomato Paste mixed with 1L hot water
Salt and Pepper
Tablespoon Fresh chopped parsley
12-15 Smoked Oysters
200-300g Peeled Baby Prawns
Grated Parmesan cheese, preferably Pecorino Romano.

1. Melt butter in large pan. Add onion and fry until clear.
2. Add olive oil, garlic and rice. Cook for one minute, tossing until rice is coated.
3. Add tomato paste and hot water mixture all at once and stir. Allow to simmer for one minute. Add parsley and salt and pepper to taste.
4. Transfer mixture to slow cooker and cook for at least one hour on low.
5. Add smoked oysters and prawns and cook for a further half an hour.

Serve with grated Parmesan cheese.

Nutritional value: fucked if I know.

This is a work in progress and I have also considered using passata instead of tomato paste but it needs to be hot. If anyone is game to try this - and I think it's worth it - feel free to experiment with the amount of tomato paste in it. It may seem daft cooking a risotto in a slow cooker but trust me; it works and is even easier than traditional methods. Just make sure you cook it on "low" or it will turn to mush.

There are two reasons I don't use calamari: first, I'm not very fond of it and second, I don't know how long it takes in a slow cooker. It's a given that rubber calamari will ruin the effect.
