Chicken Breast - what would you do

So lets say you look in the fridge tomorrow morning and find 4 fresh chicken breasts. You decide you will cook these for the evening meal for the family.

what would you do with them?

If its warm - BBQ
Get a container, juice of a lemon, 2 cloves of garlic crushed, chopped rosemary (dried is fine) salt pepper, half a glass of water.
Slash the chicken one third thru each side, into the mixture for 12 hours.

Get out, pat dry with paper towel, rub with oil - BBQ.
Simple saled of mixed leaves, pine nuts, good cheese bits, - dress well with oil/vinegar/touch of mustard - Bobs your uncle.

Open up the meaty flap bit in the middle (or cut one)
Put a desert spoon of mascarpone cheese in there.
Close it over again. Wrap in bacon (2 or 3 rashers each) and pin it all together with cocktail sticks.
Slap it in the oven at about 200C for 30 mins or so until done.
Serve with a jacket potato and cheese and some veggies.

A nice simple one, probably two breasts max though:

Fry some diced onion and crushed garlic, dice the chicken and brown it. Throw in a heap of cream, sweet chilli sauce, & some kalamata olives. Cook some shell pasta and chuck it in... reduce it so it has a nice creamy consistency, salt to taste. Serve with some salad and mashed spud :yummy:

LOL still here

This was a hit. All 4 plates were emptied including the fussy 9 year old :up: In fact it is him that stops me from trying many new things. As he gets older he is getting more and more of a taste for different foods but while he eats I am happy to keep it simple and experiment when he isnt here :)

I made something similar last night but it was light ricotta cheese with lemon rind and juice, pine nuts and coreander for stuffing and wrapped in very thing prescuitto. It's the diet version :)

Ricotta and Sage Chicken Brest

Mix together...

1/2 table spoons of ricotta (i think, hehe will give you the correct amount tonight when i get home)
2 table spoons of chopped sage
1 tea spoon of lemon zest
2 cloves of crshed garlic
1/2 cup of parmesan cheese

Make a slit lengthways along the brest and stuff each brest with the mixture. Wrap each brest with 2 slices of perchutto and use toothpics to hold the slit closed. Spray the outside with oil and cook on the bbq.

Serve on a bed of rice.

I am quite a fan of poaching chicken breasts (or even better chicken thighs) in beer with garlic and mushrooms.
Heat some butter and garlic in a pan
pop in the chicken and semi cook top of breast / thighs
poor in beer of choice (I recommend a dark ale) and reduce till you have only a bit of beer left (enough to make a sauce)
while chicken is reducing, make some mash potatoes.
once reduced take out the chicken and add a little cream to enhance the beer sauce.

I know it's the next day - but here's 2 option Bauer.... even my 4yo digs into both of these. And quite simple coz I'm shit in the kitchen.

Honey/Soy marinade for a good coupla hours (overnight/during the day if you're more organised than I) and BBQ on low. Throw together a salad, Pumpkin&Potato Bake (or both) and presto! Nice n easy.

Stir fry with:
1 x onion - diced
1/2 capsicum - sliced
2 x carrot - sliced into stick
3/4 cup of peas n corn (or whatever other vegies you have)
1 x cup of cashew nuts

together with the sauce:
which is oyster sauce/soy sauce/extra 2 spoonfuls of honey and some bbq sauce for a bit more flavour (not much!).

throw on top of some plain rice and there ya have it.


Or you can cheat and get the sauce packet from Coles/Wollies.
