Windows updates are good at fucking up drivers. Have you tried uninstalling and reinstalling the Fanatec drivers?

Yep. Been reading forums and reddit for a few hours this arvo. It fixes it for a while, then the pedals just start to go straight to 50% as soon as I touch them.

If you had them upside down, try turning them the other way

Or, accelerate to 50% in the inverted position, flip the pedal unit and continue to accelerate the remaining 50% in the other orientation.

OK, got a response so an old Reddit ID (must still be using it on another PC somewhere in this joint) from a guy who pointed me to this post.

Hello Todd,
thank you very much for your reply. Could you please tell me the reason why you are using a very old driver? This old Driver maybe causes this issue because it not included a Firmware which works with V3 Pedals.
Also I want to tell you that the small arrow beside the Brake which controls with the sensitivity of the Brake pedal in fanatec Property page was not in its normal position (it should be in the middle).
Please go to the Link below and install Fanatec driver 292 from the Link then go to Update menu in Fanatec Property page und update the pedals.
Please tell if you have the same issue while using Driver 292 and Firmware 1.30 on the Pedals
